Ingredients:
For the Chicken Marinade:
- 500g boneless chicken (cut into strips or cubes)
- 1 tbsp soy sauce
- 1 tsp ginger-garlic paste
- 1 tsp cornflour (cornstarch)
- 1/2 tsp black pepper
- 1/4 tsp salt (adjust to taste)
- 1 tbsp vinegar or lemon juice
For the Sauce:
- 2 tbsp oil (for frying)
- 1 onion (finely chopped)
- 1 bell pepper (finely chopped, preferably green)
- 2-3 green chilies (slit lengthwise)
- 1 tsp ginger-garlic paste
- 2 tbsp soy sauce
- 1 tbsp red chili sauce (adjust to spice level)
- 1 tbsp tomato ketchup
- 1 tsp vinegar
- 1 tsp sugar
- 1/4 cup water or chicken stock
- Salt to taste
- 1 tsp cornflour (optional, to thicken the sauce)
- Spring onions (for garnish)
Instructions:

Marinate the Chicken:
- In a bowl, mix the chicken pieces with soy sauce, ginger-garlic paste, cornflour, black pepper, salt, and vinegar.
- Let it marinate for at least 15-30 minutes.

Fry the Chicken:
- Heat a pan or wok and add a little oil.
- Fry the marinated chicken pieces until golden brown and cooked through. Set them aside on a plate with a paper towel to absorb excess oil.

Prepare the Sauce:
- In the same pan, add a little more oil and sauté chopped onions, bell peppers, and green chilies on medium-high heat.
- Once they soften, add ginger-garlic paste and stir-fry for another minute until fragrant.
- Add soy sauce, red chili sauce, tomato ketchup, vinegar, sugar, and water (or chicken stock). Stir well and bring to a simmer.

Thicken the Sauce (optional):
- If you want a thicker sauce, dissolve the cornflour in a little water and add it to the pan. Stir until the sauce thickens.

Combine the Chicken and Sauce:
- Add the fried chicken pieces to the sauce and toss well, ensuring that the chicken is coated evenly with the sauce.
- Cook for another 2-3 minutes until everything is well combined and heated through.

- Garnish with freshly chopped spring onions and serve hot.
- Chicken Chilli can be enjoyed with steamed rice, fried rice, or noodles.
Tips:
- Adjust the level of spice by varying the amount of green chilies or red chili sauce.
- For a crispy version, you can deep-fry the chicken after marinating, but shallow frying works well too.
