Hearty Chicken Chili: A Comforting Twist on a Classic



Ingredients:

For the Chicken Marinade:

  • 500g boneless chicken (cut into strips or cubes)
  • 1 tbsp soy sauce
  • 1 tsp ginger-garlic paste
  • 1 tsp cornflour (cornstarch)
  • 1/2 tsp black pepper
  • 1/4 tsp salt (adjust to taste)
  • 1 tbsp vinegar or lemon juice

For the Sauce:

  • 2 tbsp oil (for frying)
  • 1 onion (finely chopped)
  • 1 bell pepper (finely chopped, preferably green)
  • 2-3 green chilies (slit lengthwise)
  • 1 tsp ginger-garlic paste
  • 2 tbsp soy sauce
  • 1 tbsp red chili sauce (adjust to spice level)
  • 1 tbsp tomato ketchup
  • 1 tsp vinegar
  • 1 tsp sugar
  • 1/4 cup water or chicken stock
  • Salt to taste
  • 1 tsp cornflour (optional, to thicken the sauce)
  • Spring onions (for garnish)

Instructions:

  1. Marinate the Chicken:

    • In a bowl, mix the chicken pieces with soy sauce, ginger-garlic paste, cornflour, black pepper, salt, and vinegar.
    • Let it marinate for at least 15-30 minutes.
  2. Fry the Chicken:

    • Heat a pan or wok and add a little oil.
    • Fry the marinated chicken pieces until golden brown and cooked through. Set them aside on a plate with a paper towel to absorb excess oil.
  3. Prepare the Sauce:

    • In the same pan, add a little more oil and sauté chopped onions, bell peppers, and green chilies on medium-high heat.
    • Once they soften, add ginger-garlic paste and stir-fry for another minute until fragrant.
    • Add soy sauce, red chili sauce, tomato ketchup, vinegar, sugar, and water (or chicken stock). Stir well and bring to a simmer.
  4. Thicken the Sauce (optional):

    • If you want a thicker sauce, dissolve the cornflour in a little water and add it to the pan. Stir until the sauce thickens.
  5. Combine the Chicken and Sauce:

    • Add the fried chicken pieces to the sauce and toss well, ensuring that the chicken is coated evenly with the sauce.
    • Cook for another 2-3 minutes until everything is well combined and heated through.
  6. Garnish and Serve:

    • Garnish with freshly chopped spring onions and serve hot.
    • Chicken Chilli can be enjoyed with steamed rice, fried rice, or noodles.

Tips:

  • Adjust the level of spice by varying the amount of green chilies or red chili sauce.
  • For a crispy version, you can deep-fry the chicken after marinating, but shallow frying works well too.
